Yesterday was a great day. Colleen got to spend most of the day with Jeanne making Spanakopita. And it was Jeanne's birthday which made it even more special. We want to try to get together as much as we can, every month or two to make some ambitious foods. Spanakopita was our top pick so that's what we decided to make first.

Part of what makes this food so good is that you brush a layer of butter between every layer of the phyllo. It takes a lot of butter! Below, Jeanne expertly rolls a triangle.





Here are some of the finished Spanakopita. We had two fillings - traditional and artichoke shrimp. We also made two sizes just for variety. The large version is below.

It was a great day! Looking forward to Samosasas next time! Frank asked quisically "isn't that a drink?" - so funny! - I said "no that's MI-mosasas!". :)
I wish we lived closer so we could pop over for supper!
