Making Maple Syrup

It's the time of year in Cincinnati when Sugar Maples are tapped to collect tree sap. The conditions are just right for harvesting the sap when the temperature is below freezing at night and above freezing during the day. It was cold today but Colleen helped collect some sap from the maples at the Cincinnati Nature Center for their large syrup operation. They have been making delicious syrup for public demonstration for the past few years and anyone can volunteer to help out.

A wood burning stove heats the large steel evaporator that holds gallons of sap.
The steam escapes and the syrup thickens.
A barometer is used to check the optimal temperature and pressure.
